Olde English Recipe for Yorkshire Puddings

I was born in England so Yorkshire pudding was always on the dinner table when we had Sunday dinner. My mother always served them with roast beef, mashed potatoes and some type of vegetables. I have taken this recipe from my mother and haven't changed it because it works great and gives you perfect Yorkshires every time, as long as you follow the directions to a tee. Make sure you follow the time lines as well because its key to producing nice lite fluffy Yorkshire pudding.

INGREDIENTS

1 cup of flour

2 eggs

1/2 cup water

1/2 cup milk

1 pinch of salt

These ingredients will make approximately 12 Yorkshire puddings

DIRECTIONS

1). Add wet and dry ingredients in bowl and HAND mix until mixture is smooth and fluffy.

2). I find if you leave mixture in bowl for 2-3 hours before cooking and let mixture sit at room temperature it helps them rise more. IMPORTANT!!

3). Preheat oven to 425 degrees.

4). Take a muffin tin add add approximately 1/2 table spoon of oil to each tray opening.

5). Heat tin until oil in openings is just starting to smoke.

6). Evenly distribute Yorkshire mixture in muffin tin openings.

7). Set pan in oven for approximately 20-30 minutes. DO NOT open oven in this time or they will not rise correctly. VERY IMPORTANT!!

8) Remove from oven when tops are golden brown and serve!!!!

9).Mmmmm Thats some good pud!!!!! Enjoy!!!!
